Cherry and Almond Traybake

I’m a huge fan of the Great British Bake-off. I have watched every episode of every season…a few times!

Kimberley Wilson was a contestant on GBBO in 2013, and I loved her bakes on the program. Her Very Cherry and Almond Traybake really caught my eye  – and tastebuds. The link to the recipe on Kimberley’s website is here.

Here is Kimberley’s recipe, with any tweakings that I made.

Ingredients

For the base:

90g unsalted butter, softened
90g caster sugar
1 large free-range egg, beaten
110g plain flour
20g self-raising flour
1/2 tsp ground cinnamon
Pinch of salt

For the filling:

6-8 tablespoons of morello cherry jam (I left this out)
40g dried sour cherries, chopped
5 maraschino cherries chopped

Frangipane:

90g unsalted butter, softened
80g caster sugar
2 large free-range eggs, beaten
180g ground almonds
30g plain flour
A few drops almond extract
Zest of a lemon
Pinch of salt

Topping:

60g unsalted butter
60g caster sugar
1tbsp runny honey
60g flaked almonds (I used macadamias)
40g dried sour cherries, chopped
30g glacé cherries, chopped

Method

Heat the oven to 180 C degrees or 160 C degrees fan-forced. Line a 18cm x 27cm x 3cm baking tray with baking paper leaving 5cm excess on all sides.

Combine the ingredients for the base in a bowl and mix. Dollop the mixture into the lined tray and using the back of a spoon, smooth out the batter to create an even base.

Combine the ingredients for the filling and spoon across the base.

Combine the ingredients for the frangipane and mix until smooth. Put spoonfuls of the frangipane  over the cherry layer and then, with a fork, push the batter across to create a smooth layer. Even the surface with the back of a spoon.

Place in the centre of the oven and bake for 20-23minutes until the top is puffed and golden.

About 15 minutes into the cooking time, put all of the ingredients for the topping into a saucepan. Place over a low heat and stir gently until the butter and sugar has melted. Turn up the heat and simmer for three minutes.

Remove the traybake from the oven and pour the topping over the surface. Using the back of a metal spoon, spread and smooth the topping all over the frangipane.

Return to the oven and bake for 8-10 minutes until the nuts are golden and the honey syrup is bubbling all over.

To get a really neat finish on the portions the traybake needs to be cut upside-down, so that you are cutting the nutty topping against the firm surface of a chopping board.

Remove the traybake from the oven and cool in the tin for 15 minutes. This allows for the topping to cool and set a little so that it does not stick to the board when you turn it out. Place a clean chopping board on top of the bake and, wearing oven gloves, flip it over. Peel away the baking paper and place a wire rack, upside down, on the bake. Flip again and remove the chopping board. Cool completely on the rack.

When cool, replace the chopping board gently on top and flip the bake as above. Using a large, sharp knife trim the edges and then cut into portions.

Delicious straight away and keeps well if you put it into an airtight tin.

Peanut Butter Blondies

This recipe is James Morton’s from a Rachel Allen recipe. James uses dark chocolate rather than white, as he thinks it a better flavour  with the peanut butter. I agree, as I discovered, when making Rachel’s original recipe – see my post Peanut Butter and White Chocolate Blondies.  I decided to use a mixture of dark and milk chocolate buttons.

Jame calls his recipe brownies, but I’m going with Rachel and calling mine blondies.  They are after all, pale, as they contain no cocoa or melted chocolate.

Oh, and although I LOVE the peanut butter in the recipe, I added macadamias to the mixture not peanuts!!!

So here is my tweak on James’ and Rachel’s original recipes.

Ingredients
100g softened unsalted butter
150g crunchy peanut butter
150g caster sugar
1 free range egg beaten
1 tsp vanilla extract or paste
100g self-raising flour
50g salted macadamias or peanuts  – or any nut really. I think the salt adds a great “salty “!! flavour
100g dark and/or milk chocolate buttons

Method

Preheat the oven to 170 degrees C/150 degrees C fan-forced/Gas Mark 3.  Place a square of baking paper into a 20cm (8 inch) square tin.
In a food processor or a large bowl, beat the butter, peanut butter and sugar together until paste-like. Add the egg and vanilla and beat until combined. James says not to worry about too much beating so long as the ingredients are combined.
Add the flour, nuts and chocolate, stirring gently to combine. Dollop the mixture into the  cake tin and spread out to the edges (the mixture will be quite stiff and hard to spread).
Bake in the oven for 25-30 minutes or until golden brown on top and a skewer inserted comes out clean.

 

 

Raspberry and Macadamia Pavlova Revisited

IMG_8972 2I described recently in this blog a wonderful meringue concoction created by my friend the Architect. I hadn’t yet had the pleasure of tasting this amazing dessert…

Today, on a beautiful Sydney day in beautiful Palm Beach, I was treated to this dessert. Maggie Beer, from whom the recipe emanates, calls it a meringue; I would describe it as a vacherin (layered meringue), but to all intents and purposes it’s a wonderful Australian pavlova – all three payers!

Meringue + raspberries + creme fraiche and whipped cream + macadamias = Nirvana!

Raspberry Meringue

This luscious meringue is a Maggie Beer recipe.

It was created by a wonderful friend, as part of his Christmas feast at home in beautiful Palm Beach. His skills as an architect are obvious in the meticulous construction!

Ingredients

6 egg whites

Pinch of salt

2 cups caster sugar

1 tbl cornflour

1 tablespoon white vinegar

500 mls thickened cream, whipped

250 gms creme fraiche

3 punnets raspberries

1/2 cup macadamias, lightly roasted

Method

Preheat oven to160 degrees C (140 degrees C fan-forced). Mark 3 x 22 cm circles on baking paper. Place paper on 3 oven trays.

Beat egg whites and salt in a large bowl with an electric mixer until soft peaks form. Gradually add sugar, beating after each addition until dissolved.

Fold in cornflour and vinegar. Spread meringue evenly onto circles.

Bake meringue disks for about 40 minutes or until dry and crisp. Cool on trays.

Combine whipped cream and creme fraiche in a medium bowl.

To serve, place 1 meringue disk on a serving plate, spread with half the cream mixture and sprinkle over 1 punnet of raspberries. Top with a second meringue disk, the remaining cream mixture and 1 punnet of raspberries. Top with the remaining meringue disk and raspberries. Sprinkle over the macadamias.

Lemon Delicious Slice + Crumble Slice

Here are two slice recipes that are easy to make, keep well and freeze. Lemon Delicious Slice has a tangy lemon topping on shortbread; the Crumble Slice is actually a recipe for a crumble topping that I discovered baked really well as a slice!

Lemon Delicious Slice

Ingredients
Shortbread base
150 gms butter, chopped
1/2 tsp vanilla extract
1/3 cup caster sugar
1 tbl cornflour
1 1/3 cups plain flour
Icing sugar, to serve

Lemon topping
4 eggs
1 tsp finely grated lemon rind
1/3 cup plain flour
1 1/3 cups caster sugar
2/3 cup lemon juice

Method
Preheat oven to 180 degrees C or 160 degrees C fan-forced. Grease a 16cm x 26cm baking tin. Line with baking paper, allowing a 2cm overhang on all sides.
Place butter in a large microwave-safe bowl. Microwave on medium (50%) for 1 minute or until melted. Set aside to cool. Stir in vanilla and sugar. Sift flours over butter mixture. Using a wooden spoon, stir until a soft dough forms. Transfer to prepared tin. Press into tin. Bake for 15 minutes or until golden. Remove from oven. Set aside to cool.
To make topping, whisk eggs, lemon rind, flour and sugar together until smooth. Add lemon juice. Whisk to combine. Pour over base. Bake for 15 minutes or until just set. Cool completely in tin. Dust with icing sugar and cut into pieces.

Crumble Slice

Ingredients
100 gms plain flour
75 gms  butter at room temperature
Pinch of salt
50 gms dark brown sugar
25 gms golden syrup
50 gms rolled oats
20 gms chopped nuts ( macadamias or blanched almonds work well)

Method
Preheat the oven to 175 degrees C and line a16cm x 26cm baking tin with baking paper.
Place the flour, butter, salt and sugar into a bowl, and rub the butter into the other ingredients until the mixture forms coarse breadcrumbs.
Place mixture into the bowl of a food processor, add golden syrup, oats and chopped nuts, and pulse gently to combine.
Turn out the crumble mixture onto the lined baking tin, spread the mixture evenly and bake the crumble for about 15 minutes, until the crumble is just set. It will be a little soft when it comes out of the oven.
Remove from oven, cut into slices and cool completely in the tin.
