Lemon Posset


A posset is a beautiful dessert that is dead easy to make.

Cream is cooked with sugar and citrus juice and left to set in the fridge. 
When I first made it I couldn’t believe how quick and easy it is to whip up a really lovely dessert.

It’s perfect served on its own, with buttery biscuits or as an accompaniment to fresh fruit like mixed berries.


3 lemons
600g cream
150g caster sugar
Lemon slices, extra to serve


Zest and juice the lemons.

Put the cream into a heavy based saucepan and add the lemon zest and the caster sugar and place on the stove top.

Bring the mixture to the boil, stirring continuously to dissolve the sugar. Take off the heat and leave to cool for 5 minutes.

Add the lemon juice and stir for a minute or so until the posset has started to thicken.

Pour the posset into glasses and refrigerate for several hours. Serve the glasses with fresh berries.
