Dips and Flatbreads

Summer in Sydney. Lots of opportunities to celebrate the warm weather with outdoor entertaining with family and friends.

Here are some quick and easy suggestions for something tasty to have with a long cool drink on a hot summer’s day…

By all means make the flatbreads if you’re in the mood! The recipe is based on my pizza dough. But I would probably recommend just to buy any good quality flatbread or flout tortilla… summer is meant to be relaxing!

The dips are simple - goat’s cheese and yoghurt and a quick guacomole, made in a minute. Add some veggies like sun dried tomatoes for extra zing.

Goat’s Cheese and Yoghurt Dip
100g goats cheese
3-4 tablespoons Greek yoghurt
1 teaspoon or to taste, of finely chopped green herbs: parsley, chives, basil, thyme, or a mixture
Sea salt
Extra virgin olive oil

Beat together the goat’s cheese and Greek yoghurt. Add enough yoghurt to make a smooth mixture that is of dip consistency.

Add the finely chopped green herbs and sea salt.

Drizzle with extra virgin olive oil to finish

Quick Guac
1 very ripe avocado
Juice of 1/2 lemon
Sea salt
Optional - 1/2 teaspoon chilli paste

Scoop the flesh from the avocado and chop roughly. Add the lemon juice and salt and chilli if using. Mash together, making sure you retain some texture. Serve with a wedge of lemon.
